Caramel Apple Spice Cake

It’s been a while, hasn’t it? Well, I’ve returned with a wonderfully fall cake, perfect for using those apples that you might have picked at your local orchard.

The apples, combined with the the cinnamon, caramel sauce, and cream cheese frosting, make an easy-to-make, yummy cake–the most difficult part is slicing the apples!

Also, make sure you read the note and the very bottom of the post; it’ll explain my recent absence!

What you Need
Batter

  • 2 cups flour
  • 1/2 teaspoon salt
  • 4 teaspoons baking powder
  • 4 teaspoons ground cinnamon
  • 4 eggs
  • 1 1/2 cups sugar
  • 1 teaspoon vanilla
  • 2/3 cup milk
  • 3 cups of apples
  • 1/3 cup and 2 tablespoons caramel sauce

Frosting

  • 4 ounces cream cheese
  • 1\4 teaspoon vanilla
  • 2 tablespoons milk
  • 2 1/2 cup powdered sugar

How you do it

  1. Preheat oven to 350F. Butter and flour a 9×13 inch glass dish.

  3. Add in the eggs and sugar. Note: your batter might be thick and this point abd may not fully combine. This texture is key for the caramel sauce to not pool at the bottom of the cake.10121916396905597258994849709.jpg

  5. Add in the vanilla.
  6. Add in your apples. I like my apple pieces as small as possible (see below), but if you’d prefer larger chunks, you can do that, as well.10121916443827182049641393461.jpg1012191647a6178660172445892286.jpg
  7. Pour batter into prepared pan and bake for 27-35 minutes, or until an inserted toothpick comes out clean.10121916551399303404200476579.jpg
  8. When cake is fully cooked, remove from oven and let rest for a 10 minutes. Once it’s cooled down some, poke holes throughout the entire cake.1012191735a2888103092922882588.jpg

  10. As the cake continues to cool,make the frosting. Combine all ingredients.10121918364680226598544509365.jpg

After the cake has cooled, frost it with the cream cheese frosting. When you’re all done, enjoy immediately!

I love how all of that cinnamon makes the cake a pretty light brown. Very fall.

Okay, so why have I been gone for a couple of months? Well, I’m engaged!

Actually, this happened in March, but, we’ve recently started planning for real, and it’s certainly taking up a lot of my time. When I first started this blog, I wanted it to be a way to express myself, challenge my baking, and share my creations with the world. And while that hasn’t changed, planning a wedding has is certainly challenging my creativity-in the best way possible!

Now that all of the major things have fallen into place for the wedding, I’m looking to get back into my regular cadence of a new recipe every 2 weeks. After all, the holiday season is very much upon us, and I can’t wait to see what fun recipes I come up with.

Just know that there might be a slight delay. 🙂
