Made with both freshly ground coffee AND brewed coffee, these indulgent cookies have a fluffy texture and aren’t overly sweet. They’re made for coffee lovers.
What you Need
Cookie Dough
- 2 cups and 2 tablespoons flour
- 2 tablespoons ground coffee
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup salted butter, softened
- 1 cup brown sugar
- 1/4 cup white sugar
- 2 eggs
- 2 teaspoons vanilla
- 1 1/2 teaspoon brewed coffee
- 3/4 cup mini semi-sweet chocolate chips
Chocolate Drizzle
- 3/4 cup mini semi-sweet chocolate chips
How you do It
- Preheat oven to 350.
- Combine the flour, ground coffee, baking soda, and salt. Set aside.
- In separate bowl or stand mixer, cream together the butter and sugars.
- Once fluffy, add in the eggs.
- Add in the vanilla and brewed coffee.
- In three batches, pour in the flour mixture, beating until throughly combined between each batch.
- Using a spoon, stir in the chocolate chips.
- Line a cookie sheet with parchment paper or wax paper. Drop 1 tablespoon-sized balls of dough onto cookie sheet and bake for 14-18 minutes, or until edges are a light brown.
- Remove cookies from oven, move to cooling rack, and let cool for at least 10 minutes.
- While cookies are cooling, melt remain mini chocolate chips in microwave in 10 second intervals, stirring in between.
- Pour melted chocolate into plastic baggie and drizzle over cookies.
Let chocolate drizzle harden, and enjoy!
My favorite part about these cookies is that they aren’t overly sweet. Using mini chocolate chips puts the focus on the taste of coffee, but there’s enough there to still taste the chocolate.
But if you want more of a chocolate taste, you can make the drizzle as thick as you want–no rules here.
